Raki or tsikoydia is destiled in a special made and disigned boiler caled "kazani" or "rakokazano" (is made from copper and tin-plated with zinc to be protected from cinder). Destilation takes place 30 to 40 days after wine has been made, using the rest from the grapes (=tsikouda).
